Blanched simply means that the skin of the almond has been removed. These nuts are available either raw, roasted with salt, or roasted without any salt added. Roasting adds an extra crispness to the nut along with that toasted flavor. We roast these nuts almost daily, so you can be assured that they will be fresh with wonderful flavor.
